Aloo Gosht (Lamb)

Ingredients:

2.2lbs lamb cut into cubes
1 lb of medium sized potatoes cut into cubes
2 oz butter
3 tbsps of cooking oil
2 large onions, chopped
1-2 tbsps tomato paste
15 fl oz warm water
Juice of one fresh lemon
Coriander leaves for garnish

Method:

  • In some butter fry potatoes until golden brown.
  • Remove from heat and take out with a slotted spoon and keep aside.
  • In the remaining butter add 3 tbsps of cooking oil.
  • Add 1 large chopped onion and all spices.
  • Cook for about 5 minutes, stirring all the time as not to burn the spices.
  • Take off heat
  • Put in liquidiser 1 large onion, add a little water to blend, then add blended onion to pan, stirring frequently.
  • Add the meat on a high heat cooking until it changes colour, for about 5-6 minutes.
  • Sitr in 1-2 tbsps of tomato paste and add 15 fl oz of warm water and bring to boil, cover and simmer for 40-50 minutes.
  • Add pre-browned potatoes and cook for a further 15 minutes or until potatoes are tender.
  • Take off heat and add the juice of a lemon and sprinke with coriander leaves.



Serves: 4-6 persons

Preparation Time: 20 mins

Cooking Time: 1hr 30 mins. A slow cooker would be ideal for this recipe
