Mixed Vegetable Curry

Ingredients:

One large onion, finely chopped
5 tbsps cooking oil
1 can chopped tomatoes
1/2 lb diced potatoes
1/2 lb frozen mixed veg, or fresh (your choice)
Handful coriander leaves, finely chopped for garnish
1 tablespoon of tomato paste

Method:

  • Finely chop one large onion.
  • Heat 4-5 tbsps oil in pan and fry the onion until lightly browned.
  • Add all spices, mix well and cook for 1-2 mins but without burning.
  • Add one can of chopped tomatoes with juice and tomato paste.
  • Stir continuously for about 2 minutes over a low heat.
  • Add all vegetables, potatoes, beans, carrots, peas and brocolli. (it is easier to buy a frozen bag of mixed veg but this will not be as 'crisp' as fresh veg.
  • Add 10 fl oz of warm water if using fresh veg and 5 fl oz of water if using frozen veg, cover and cook for 5-6 minutes or until veg is soft.
  • Take off heat.
  • Consistency should not be runny. If it is, simmer with lid off until thickened.
  • When finished garnish with coriander.
