Mushroom Bhaji

Ingredients:

3-4 tbsps of cooking oil
1 medium sized onion, finely chopped
8 oz mushrooms
1 tbsp tomato paste
Curries4u Mushroom Bahji Spice Pack

Method:

  • Cook onions in oil until ightly browned.
  • Lower heat and add all spices, stir and fry.
  • Add 1 tbsp of water to stop the spices from sticking. Spices must not burn!
  • As soon as this dries up add a little more water. Keep doing this for 5 minutes.
  • Add 1 tbsp of tomato paste in with the other ingredients, then add mushrooms and mix.
  • Sprinkle 2 tbsps of water and cover, cook for a further 10 minutes.
  • Take lid off during cooking, if necessary, until it thickens.

The finished dish should have a little amount of dark 'gravy', but it should not appear runny.
